I started baking as a teenager when I would spend the summers in India with my grandparents. They were both July babies, but being lacto-vegetarians (non egg eaters), they didn’t have cake on their birthday. This was not acceptable to me, so I experimented with eggless cakes in my grandmother’s oven that only had two settings- off and scorch. After several years of burnt, rubbery, and sunken cakes, I hung up my baking hat.
All of that changed a few years ago when my husband bought me a copy of Vegan Cupcakes Take Over the World. I baked my way through this book and my love for cake came back to life. Although I’m not vegan, I like to limit my intake of animal products so you’ll find a lot of vegan desserts here. As a fan of all things miniature and someone who usually bakes for two, you’ll also find a lot of cakes that will fit in the palm of your hand.
My favorite tools are my oven thermometer and my kitchen scale, and I’m a firm believer in baking by weight. I also think that cupcakes are still cool. Seriously folks, they are cups of cake!
